It is the incompletely ripe and dried fruit of the Piper nigrum; berry 3 to 6 mm, black in color and wrinkled surface. When splitting it gives off an intense and spicy aroma. Ground black pepper, It is used in both savory and sweet dishes. We find it forming part of a multitude of mixtures from different countries, such as curry or masala (India), shichimi toragashi (seven Japanese spices that replace the more expensive sechuan pepper), baharat (Gulf coast), zhoug (Yemen) and ras el hanout (Morocco). It also appears in the preparation of sauces, such as beamesa or white mustard. In desserts, combine with fresh strawberries, chocolate and gingerbread, etc.
